let’s do this

The time has come.  

Today is my first day back at school for inservice – how is that even possible?  I seriously have no idea where the summer went (but I do know that it was FUN!!).

Although I will miss the freedom of summer, I am very ready to get back into my routine.  


I picked out my clothes last night (I’ll do my best to remember to take a picture!) and packed up my cheer and gym bag.  Some very kind people are providing breakfast and lunch at school, but I have some extra healthy snacks stashed away as well.  I made some overnight OIAJ and dropped a lara uber bar in my bag.  Hopefully I won’t get too hungry.  🙂

This morning’s workout was a good one!  It’s a lower body workout based on exercises Jessica Simpson did to get her legs and booty in shape to play Daisy Duke.  I’ll post it later this week!

Vacation Recap: Mexico 2012

It’s hard to believe that this time last week we were still in Mexico trying to soak up every ounce of all-inclusive beachy goodness.  

This trip was one of my favorite vacations ever; it was just so perfect!  Sunshine the entire trip, wonderful food, amazing staff, and unlimited time with Daniel made for an amazing getaway.



Some highlights of the trip include:

relaxing on the beach in the beautiful sunshine every single day


playing games around the pool with the activity staff (bingo, darts, trivia, dancing, etc)

salsa dance lessons

couples Swedish massage with hydrotherapy


snorkeling (we saw a barracuda – we used an underwater camera and I will put those pictures up soon!)

walking on the beach


delicious food & umbrella drinks


seeing a giant sea turtle come up onto our beach to lay her eggs (they wouldn’t let us on the beach to take pictures since the flash would scare her, so this is the best picture we could get)

Daniel was very excited that those pictures made the blog 😉

It was a very memorable trip, and it was wonderful to get to relax and spend all of our time together.  Maybe one day we can a view like this permanently…



Now we have to start planning and saving for the next trip!  Any suggestions????

What is the most memorable vacation that you had?

What is your dream vacation???  I think mine would be Australia, but then I can also think of about 50 other places that I would also call dream vacations. 🙂

mango avocado ice cream

Hey hey my lovely blog friends!  I hope that you enjoyed your weekend and were able to celebrate Father’s day with the people you love.  

I got to spend the whole weekend with family, and it was wonderful.  On Saturday, Daniel and I went to his family reunion and were able to spend time with his siblings, parents, aunts, uncles, and cousins.  That night, we got together with my family and had a delicious dinner outside watching my little cousins play on their new playset (I will have to take pictures – it’s the coolest thing ever and I kind of want one for myself).  Sunday evening we went to my parents house for a big Father’s day dinner.  Daniel grilled the best pork chops in the history of the world, and we also had a plethora of other delicious treats: black-eyed peas, cornbread, pole beans, corn on the cob, and grilled squash and zucchini from our garden.  It was quite the meal.  After dinner, we headed outside and played whiffle ball and washers.  I completely sucked at whiffle ball, but I redeemed myself with washers.  I had never played before, but I completely dominated the game (I even beat my brother…..not that we’re competitive or anything).  We finished the night off by enjoying my mom’s homemade blackberry cobbler and vanilla ice cream.  It was pretty much the perfect night with my family.

You’re probably wondering why I haven’t mentioned that ice cream yet, aren’t you?  Patience is a virtue, people.  😉  When it comes to ice cream, I don’t have much patience either, so let’s get right to that recipe.

This isn’t actually ice cream, but it sure does taste like soft serve!  Not only is this recipe delicious, but it is super simple with only three ingredients!

Mango Avocado “Ice Cream”

  • 1/2 avocado, frozen (peel and chop your avocado before freezing it)
  • about 3/4 or 1 cup frozen mango (I used one small champagne mango that I peeled and chopped myself)
  • 1/2 cup milk of choice (I used unsweetened vanilla almond milk)

Blend all ingredients together and enjoy!


This is a healthy, scrumptious, sweet-relief-from-the-summer-heat treat.  I bought several avocados yesterday at the grocery store so that I can put them in the freezer and make this recipe again.  I can’t wait!  I think next time I’ll add in some coconut extract and use coconut almond milk.  I’ll let you know how it turns out.

The epitome of summer in the south

Hello, friends!!!  (I could really say “Hello, Mom and Amber” – but it sounds a lot better to refer to you in this way haha.)  Does anybody else feel like Monday and Tuesday were a full week on their own?  Not that they were bad, I just feel like so much happened between Monday morning and Tuesday night that it had be more than 48 hours.  However, we still have a few days to be productive this week, but THEN…it’s a holiday weekend!!!  YAY!

Since I had multiple workouts on Monday, I kept a close eye on my protein intake.  I typically try to get about 70-80 grams of protein per day, but I knew I needed more on this particular day.  Are you ready for this???  I got in 105 grams of protein Monday – BAM!  This was accomplished by eating a Fitnessista cookie dough cereal bowl for breakfast (with vanilla Sun Warrior), leftover grilled salmon for lunch, tuna for a snack, and Cajun baked fish for dinner (thanks, Daniel, for cooking this amazing fish and having it ready as I walked through the door after Zumba).  I also ate a plethora of snacks on Monday, and they were all delicious.  However, there was one that was absolutely perfect.  This is the epitome of summer in the south…

That would be a home grown tomato sandwich (whole wheat honey bread and Smart Balance mayo, salt and fresh cracked pepper).  You better believe I’ll be eating a LOT of these this summer!
