It’s Official!

I think I’ve used that post title before…and most everyone thought it was about me being pregnant.  Once again, sorry to disappoint you, but that’s not it.  In fact, you should be warned that a baby probably won’t be in my future any time soon (unless God has a totally different plan for me).  

So what’s the news then???  It’s officially SUMMER BREAK!!!!!  WAHOOOOO!!!!!  It hasn’t feel real to me lately that school was about to end, but then when I went today, none of the kids were there and it was suddenly very real.  Just in case you’re wondering, yes, the summer breaks are one of the best parts of being a teacher.  To celebrate, I treated myself to Subway and then had a no sugar added fudgesicle.  Okay, that’s not much of a celebration, but then I went to hang out with some of my favorite kiddos, my cousins Jackson, Grant, and Chase.  These boys are full of energy and SO MUCH FUN!  I can’t wait to hang out and go swimming with them later this weekend.

Spending some quality time with these handsome boys was the perfect way to celebrate the start of summer.  I love them so much!

Now, I said on Wednesday that I would be back with some workout inspiration today, so here it comes!  It’s more Pinterest workouts, of course!  What else would you expect from me?  Lately all of my workouts have been at the park using the playground equipment and also my homemade trx-style suspension trainers.  The workouts have been FUN and very effective!  All of these workouts were posted by other awesome bloggers, and the links can be found on my pinterest workout page!

Now I’m off to get my highlights touched up (they are about two months past due…and don’t even get my started on my crazy eyebrows that I’m getting waxed today!  I swear they grow straight OUT like an old man’s…it’s ridiculous).  I believe after that Daniel and I are going out on a date! 

I hope that y’all have a great holiday weekend!  I have my first “long” run tomorrow (4 miles), and I’ll be sure to let you know how it goes!

My Favorite Salad Dressing

Look!  I’m meeting my “one post a day” goal!  One down, five to go!

Since I knew I was going to be out of school today, I didn’t prep my food yesterday like I normally would have.  I spent as much of my day as possible hanging out with Daniel (church, lunch, grocery shopping), hauling fire wood (not as much of a workout as chopping the firewood, but still an active rest day!), and enjoying time with my family and these precious boys.

I thoroughly enjoyed my day off from school – I trained this morning, met a friend that was only in town briefly, prepped some lunches, met another friend for Starbucks (yay for gift cards!), then went on to the gym for cardio dance, abs, and then zumba. 

My darling friend Jade and I got to spend a couple of hours together talking about all the things we love that would probably annoy the mess out of most people (fitness, nutrition, overall health and wellbeing).  She mentioned that she had seen a brilliant idea on pinterest about making salads in mason jars.  When she told me the idea, I was so ecstatic and knew that I had to go home and immediately make a couple of jars for lunch.  The idea is genius, I’m telling you! Smile

Layer your salad in a mason jar – dressing on the bottom, then veggies and other add-ins, then spinach or other lettuce on top.  It keeps the lettuce from wilting since it isn’t touching the dressing, and it saves you from having to pack eighteen different little tupperware containers for all your salad fixings.

Wasabi dressing (recipe below)

Carrots

Purple cabbage

Blueberries

Pecans

Romaine

Spinach

So tomorrow, I will simply shake up my jar and empty them into a big bowl!  (Don’t worry, that’s not my whole lunch – it’s not even half!)

Maybe I’m just easily amused, but how cool is that? 

Wasabi Dressing (I call this my “I love Trader Joe’s dressing”)

Wasabi mayonnaise (I guess about 1 tbsp?)

Orange Muscat Champagne Vinegar (2 tbsp ish)

Mango butter (about 1 tbsp)

Greek yogurt

Whisk all ingredients together and enjoy!  For the Greek yogurt, I add a dollop, mix, taste, and then adjust according to the level of spiciness I’m wanting.

Since I had some leftover dressing after making my salad jars, I decided to have a beast of a salad for lunch.

Romaine, spinach, carrots, purple cabbage, blueberries, strawberries, homemade pickled onions, chopped pecans, chia seeds, wasabi dressing, and a little sliced turkey on the side.  It hit the spot.
