Vacation Recap: Mexico 2012

It’s hard to believe that this time last week we were still in Mexico trying to soak up every ounce of all-inclusive beachy goodness.  

This trip was one of my favorite vacations ever; it was just so perfect!  Sunshine the entire trip, wonderful food, amazing staff, and unlimited time with Daniel made for an amazing getaway.

Some highlights of the trip include:

It was a very memorable trip, and it was wonderful to get to relax and spend all of our time together.  Maybe one day we can a view like this permanently…

back to reality and a recipe

Hey friends!  I missed y’all while I was gone!  I hope that you had a great week last week and a wonderful weekend.

Obviously, we’re back from Cancun – sort of.  Instead of going to our house, we are house/pet sitting this week.  The home is beautiful and has a gorgeous pool and gourmet kitchen, so it’s a nice way to ease back into real life. 🙂  I do miss my fur babies though!  

I’ll have the vacation recap up later this week once I get the pictures sorted out.  I actually remembered to take pictures of the food this time!

In other news, yesterday was back to regular schedule for both Daniel and me.  He headed off to work around 630 while I was up making breakfast.  Martha and I worked out 7:30-9 and then I met up with Amy for some hot yoga at Gold’s Gym (mannnnn, it felt so good to stretch everything out).  After a lunch date with Mom and a quick trip into Marshalls, I was off to the gym to teach cardio dance, abs, and zumba.  It makes me tired just thinking back over it haha.  My body definitely got used to lounging by the pool or on the beach all day, but it’s good to be back to an active lifestyle.  At least that’s what I thought until I woke up this morning and went to get out of bed.

Oh my gosh my legs are so ridiculously sore!  It’s clear that they enjoyed the break haha.  Oddly enough, my calves are more sore than anything, and I can’t even remember the last time that was the case.  Teaching SHRED will be a definite challenge tonight, but it will be good to work out some of the soreness.

Since I have this amazing gourmet kitchen available this week, I’ve been cooking every single night.  I have to admit that I miss having all our meals prepared for us whenever we wanted, but I have enjoyed cooking again.  Sunday night was a cheesy chicken skillet with peppers and onions, and last night I made my favorite baked salmon recipe.  

First, I preheated the oven to 400.

Next, I combined about half a cup light mayo with salt, pepper, Rendezvous seasoning, grated parmesan cheese, lemon zest, and the juice from half a lemon.

 I slathered that mixture onto a beautiful piece of salmon and baked for 20-25 minutes.

 Served up with simple roasted asparagus, this was an easy and delicious weeknight meal.

Even though there are only two of us, I somehow manage to make enough for a family of six every time I cook.  Please tell me I’m not the only one that struggles with this.  Because of my tendency to cook enough to feed an army, leftovers are on the menu for tonight.

Cheer Camp, Running, and One Lovely Blog

Heyyyyyyy friends!!!!  I’m so sorry that I abandoned the blog world for the majority of this week.  I took my computer to cheer camp, but unfortunately did not have internet access.  Even if that would have been possible, I don’t think I could have blogged because of our crazy schedule.  We left our rooms at 6:45 to go to breakfast and most nights did not get back to our rooms until 10:45 or 11.  It was exhausting, but it was an amazing experience.  My team grew even closer than they were before, and we learned a lot throughout the week.  I am one proud coach to say the least.  Oh, and not to brag, but my cheerleaders got second place (!!!!!) in both the cheer and dance divisions.  This was a new record for our school, and I know it’s going to be an awesome year.

This also happened the last day of camp.  It was fun to do some stunts again!  It’s been quite some time haha!

After coming home from camp, I took a 2.5 hour nap, ate some sushi, hung out with Daniel, and then went to bed.  I slept until almost NINE the next morning haha!  My body must have needed the rest.  Since it was already hot outside, I decided to run on the treadmill at the gym before Zumba.  I definitely prefer to run outside, but it was nice to have a break from the hills.  I did 3.1 miles in 30 minutes, then rested for about an hour before teaching class.  I have a 5.5 or 6 mile run planned for tomorrow morning (depending on which route I decide to take home) before teaching Zumba again.  I’m looking forward to it!  My half marathon is three months from tomorrow, and I feel that so far my training is going very well.  I think within the next three months that I should be able to get my mileage where it needs to be without injuring myself or doing any sort of crazy training.

Y’all know I love to do some surveys, but for some reason random facts are so hard for me haha!  Here goes!
1. I was mistaken as a camper at cheer camp at least three times.  It was quite hilarious, and I took it as a compliment each time! 🙂
2. I am obsessed with mangos and avocados right now.  Last week, I made a mango avocado smoothie one day and mango avocado “ice cream” the next!

3. I teach at the same school that I attended K-12.  It’s at a new campus now and is much larger, but there are several teachers I had growing up who are now my colleagues!
4. I can’t wait to see Madagascar 3 in 3D!  I told Daniel that if he wouldn’t go with me I would go by myself because I want to see it so badly.  Also, I’ve never seen a movie in 3D (I know, I must live in a hole) other than the I-Max movie I saw at some camp in middle school (space camp, maybe?).  Polka dot polka dot polka dot afro!
5. I cheered/danced at the half time of the Citrus Bowl my junior year of high school (New Years Day 2002).  It was so much fun! We also got to spend NYE in the Magic Kingdom!
6. This year is a big “anniversary” year for Daniel and me.  October marks five glorious years of marriage, and December marks TEN YEARS since our first date!  How has it already been that long???  On one hand, it seems impossible that it has been ten years since that first date, but on the other hand, it feels like I’ve been with Daniel my entire life (in a very good way).

7.  WE LEAVE FOR MEXICO IN THREE WEEKS!!!!!!!!!!!!!  I cannot wait to be back “home” and see all my friends at the Fiesta Americana Condesa.  Never in my life did I think I would be able to go to a beautiful all-inclusive resort three times within twelve months.  I am SO excited!!!

MEXICO 2011

I think it goes without saying that vacations are amazing.  Being able to get away from the busy, hectic, wired everyday chaos and allowing yourself to unplug and relax is the best thing ever.

Mexico was truly an incredible destination for our vacation this year.  If you know me at all, you know that I am an extremely cheap frugal person.  When Daniel and I were looking for a fun getaway for this summer, we were originally thinking just a quick drive down to the beach for a few nights.  However, as we were adding up the cost, the total kept growing and growing (groceries, condo, dinner, ridiculously high gas prices, etc), so we decided to check into some other options.  My friend Kathy put together an amazing deal for us at an all-inclusive resort in Mexico (including airfare, transportation to and from the resort, and travel insurance) for a fantastically lower price than our “quick beach trip” was going to cost us.  I think we hesitated about .371 seconds before agreeing and putting down a deposit on our trip.

We stayed at the Fiesta Americana Condesa Cancun, and I have nothing but good things to say about this resort (honestly!).  The restaurants, the food, the beach, the staff, the service, the room, the view….it was all perfect!

*I honestly meant to take pictures of all my food, and I would set out my camera at each meal before the food arrived, but then the food would get there…and I forgot all about my camera.  Oops!

Mexico was truly amazing, and it felt wonderful to get away and relax.  Daniel and I had a great trip, and we are already talking about going back (I need to start buying my lotto tickets now).
