I’m losing my mind…

This post is going to be short and sweet…

This week has seemed to drag along but at the same time, it has been a total blur.  Between starting two new units in my classroom, hosting cheer clinics, training, and teaching zumba/shred/cardio dance classes, I’m completely wiped.  I have also been staying up a little later than normal, and lack of sleep is never a good thing.

Today at lunch, my friend was in the middle of eating her cafeteria salad and then realized she brought her lunch to school.  She was upset because what she brought was definitely better than cafeteria food!  We all got a good laugh out of it, but then I reminder her that she didn’t have to pack lunch for tomorrow since it would be there waiting on her.  I finished my cafeteria salad + half a turkey sandwich on wheat and went on with my crazy day.

Tonight, as I was catching up on some blogs after dinner, I came across one that mentioned turkey pepperoni, and I exclaimed, “Awwww, man!”  My dogs perked up their ears and Daniel asked what was wrong.  I realized that I had packed my lunch for school today too, and I didn’t even remember it until 8:30 tonight.  Wow.  I’m losing my mind!  I texted my friend from work and she got a big kick out of it and assured me that my lunch would be waiting on me tomorrow right along with hers.  We promised to remind each other to eat our packed lunches!

Please tell me I’m not the only one losing my mind!

No Excuses

So…I didn’t post all week.

I could say that I was busy.

I could say that I was on Spring Break (which is true).

I could say I was on some amazing tropical vacation (which is a lie).

OR I could tell you the truth.  Let’s go with that.

I had every intention of posting each day last week, especially because I was on break from school.  However, I just didn’t feel like it.  Lazy?  Perhaps.  I enjoyed the break from absolutely everything, and I definitely feel refreshed.  My idea of Spring Break used to be sitting on the beach, toes in the sand, listening to the ocean waves crash peacefully onto the shore as I watch the sun seemingly sink into the water.  Let’s be honest, that’s STILL my idea of Spring Break!  Because I work at night, that idea was not a realistic one for me.  So what did I do over my break?  So glad you asked!

Slept in until almost 8 a.m. every single morning!!!  Glorious sleep!

Read – I read a lot of health and fitness articles, as well as the adorable novel Moving Neutral by food and fashion blogger Katy Atlas.

Planned and prepped food for the plan – more on that tomorrow.

Watched more TV than I usually would – I still love Saved by the Bell just as much as I used to!

Spent some quality time with m-swag.

Took these crazy puppies on several walks to the park down the street.

Poor Clyde, he needs some new pictures.  I tried to take several, but he has a hard time holding still for more than .19 seconds!

Harley gets just a tiny bit excited when we go run outside!

Spent a great amount of time with Daniel (especially over the weekend).

Had a girls night with my mom, cousin, and friend.  I now have a French pedicure thanks to sweet cousin Anne.

Convinced Daniel to go see The Hunger Games with me.  I thought the movie was excellent, but, as always, the book was better.  I want to read the second book again haha.

Daniel said it hurts to smile, so he’ll roll with his “prison photo” face.

Enjoyed a night out with friends.

Bridal shower for my great friend Hazelnut.  Okay, her name is Hazel, but I like to pretend her real name is Hazelnut.  We also call her Wheezy, but I’m not exactly sure why…

Grocery shopping.

Food prep for the upcoming week.

Fish taco night and my new favorite dessert!

Thank you for the well wishes – Daniel convinced me I should actually take some medicine today, and what do you know, it really did help.  I’m feeling much more like myself today, and hopefully tomorrow will be even better.

But back to the important things – tonight was fish taco night!  Much better than random egg combination night and sauteed veggies and garlic bread night. 🙂

Tonight’s dinner was absolutely perfect.  I don’t know if I was just incredibly hungry or if Daniel and I really do concoct the best fish tacos ever.

Daniel was cooking the fish while I was on my way home from Zumba (wish was amazingly sweaty and fun tonight!), and we ate about five minutes after I walked in the door.  I had to make a pit stop on the way home to buy a fresh avocado, and I’m so glad I did.  I may or may not have eaten HALF the avocado as part of my dinner.

Since we ate so quickly after I got home, I didn’t really think about grabbing my camera (maybe one day I’ll start to get better at this whole blogging thing).  We briefly toasted up some small corn tortillas on the stove, and I topped mine with the following:

  • Fage 0% plain Greek yogurt (in place of sour cream)

  • Pinch of shredded cheese

  • Salsa

  • Homemade pickled onions (SO GOOD!)

  • Tilapia (that Daniel cooked on the stone in the oven with some seasoning blend he made – it rocks)

  • AVOCADO!!!

It was so delicious – I kept “mmmmm”ing with each bite (think What About Bob style).  It was THAT good.  For my second, I skipped the tortilla and just mixed the other ingredients together.

After dinner, my natural sweet tooth teeth kicked in.  I was very tempted to go for the chocolate or peanut butter (or both), but reminded myself of my clean eating goal.  I decided to enjoy some fresh fruit instead.  I think I found my new favorite dessert!  I peeled and chopped one Cara Cara orange, a champagne mango, and a kiwi.  I topped the mix with some coconut butter shavings and dug in.  SO SO SO good.

Between the avocado and coconut butter, I think I definitely got in my day’s (or week’s) worth of healthy fats. 🙂

I do apologize for the lack of pictures…does this make up for it???

My babies!  This was the first weekend we had little Clyde.  Harley couldn’t leave him alone!

I promise tomorrow that I will post a picture that isn’t several years old and that is actually relevant to my post.

Tomorrow is Friday Eve!  I hope you are as excited as I am!

Let the Celebrating Begin!

This weekend has been full of celebrations!  Friday night was a wedding reception, Saturday night was a wedding and reception, and today was a day to remember and celebrate our heroes and our freedom.

Friday night was a wedding celebration for two of our close friends (more like family).  Their outdoor reception could not have been more perfect.  Mason jar glasses with customizable name tags, live music, delectable food…what more could you ask for?  I danced all night (and my feet just loved me for it), and it was truly amazing to get to share such a special time with my friends.

Saturday night, my brother was the best man in his best friend’s wedding.  In case you didn’t know, my brother started losing weight last November, and this past Thursday he hit the 100 pound weight loss mark.  I am so incredibly proud of him (blog post on his journey soon to come), and he looked so handsome in his suit at the wedding!

As I announced last week, this is my birthday month.  Last night, Daniel surprised me with an early birthday/anniversary present…

REBEL!!!!!!!!!!!!!!!!!!!!!!!!  I cannot explain how ecstatic this makes me!

As soon as we got home from church and grocery shopping today, I read the instruction manual and started taking pictures (okay, maybe I snapped several before reading the manual).  I have been taking pictures ALL.DAY.LONG and I love it!  I am already completely obsessed with it.

Obviously, this is my birthday present, anniversary gift (we don’t usually do anniversary gifts, though), and Christmas present.  Have I ever mentioned that Daniel is the best gift giver ever?  Literally – the first gift he bought for me was in December 2002 when we started dating, and I cannot think of one thing he got me that I haven’t loved.  Pretty impressive if you ask me.  He continues to amaze me with his thoughtfulness. 

Tonight we had a small cookout at my cousin’s house.  We roasted hot dogs and made s’mores (my favorite!) around the fire.

Another great weekend – so blessed!  I hope all of you enjoyed your weekend as well, and that you took some time to reflect and count your blessings.  It’s hard to complain when we have so much for which we can be thankful.  Have a FABULOUS week!

Goals for this week: post more than once a week (terrible blogger award should definitely go to me!), take a bazillion pictures with my new camera, eat CLEAN (no sugary and sodium-filled junk), yoga twice this week, and an extra amount of laughter each day!
